Ever wonder why ripe bananas taste sweet but green ones don’t?
The Advanced Biology students explored this difference by examining banana cells under a microscope. When stained with iodine, plastids that contain starch turn dark purple. In ripe bananas, there are fewer starch granules because they are converted into sugars as the fruit ripens. This conversion is what gives ripe bananas their sweet flavor!
